For our summer gin we use lots of local rhubarb from Krogsholm Fruit Plantation on North Bornholm along with a number of other ingredients including rosemary, mint and orange peel.
The rhubarb is macerated and then distilled with more fresh rhubarb in a copper basket in the steam room. Finally, a homemade concentrated rhubarb juice is added.
This gives not only a lovely reddish colour, but also a fresh, summery profile.
This gin was first produced in 2018 and has proven to be a classic!
