The Princess and the Pea

Ingredients:
5 cl Gin Bornholm: H.C. Andersen Edition 2 cl freshly squeezed lemon juice. Andersen Edition
2 cl freshly squeezed lemon juice.
2 cl sugar syrup.
1 pasteurized egg white.
1 handful green peas (fresh or frozen).
Ice cubes.
Pea shoots or basil for garnish.

Method:
Boil the peas in a pot of water for 2-3 minutes until soft.

Drain the water and blend the cooked peas to a smooth puree.

Add the gin, lemon juice, sugar syrup, egg white and pea puree to a shaker.

Add ice cubes to the shaker and shake vigorously for 10-15 seconds.

Pour the cocktail through a strainer into a chilled glass filled with ice.

Garnish with pea shoots or basil on top and serve immediately.

Tip: If you want an even greener color, you can add a few drops of green food coloring to the cocktail.
