The Princess and the Pea
The Princess and the Pea cocktail was created in honour of the famous Danish author, H.C. Andersen. It is made with H.C. Andersen Gin, lemon juice, sugar syrup and egg whites and is served with a small green pea on top, referring to the author's famous fairy tale "The Princess and the Pea". The cocktail is a tribute to Hans Christian Andersen. Andersen's imagination and creativity, and it has become a favourite among gin lovers all over the world.
Ingredients:
5 cl Gin Bornholm: H.C. Andersen Edition
2 cl freshly squeezed lemon juice.
2 cl sugar syrup.
1 pasteurised egg white.
1 handful green peas (fresh or frozen).
Iced cubes.
Pea shoots or mint leaves for garnish.
Method:
1. Boil the peas in a pan of water for 2-3 minutes until soft.
2. Drain the water and blend the cooked peas into a smooth puree.
3. Add the gin, lemon juice, sugar syrup, egg white and pea puree to a shaker.
4. Add ice cubes to the shaker and shake vigorously for 10-15 seconds.
5. Pour the cocktail through a strainer into a chilled glass filled with ice.
6. Garnish with pea shoots or mint leaves on top and serve immediately.
Tip: If you want an even greener colour, add a few drops of green fruit colour to the cocktail.

Ingredienser:
5 cl Gin Bornholm: H.C. Andersen Edition
2 cl friskpresset citronsaft.
2 cl sukkersirup.
1 pasteuriseret æggehvide.
1 håndfuld grønne ærter (friske eller frosne).
Isterninger.
Ærteskud eller mynteblade til pynt.
Fremgangsmåde:
Kog ærterne i en gryde med vand i 2-3 minutter, indtil de er bløde.
Dræn vandet og blend de kogte ærter til en glat pure.
Tilsæt gin, citronsaft, sukkersirup, æggehvide og ærtepure i en shaker.
Tilsæt isterninger til shakeren og ryst kraftigt i 10-15 sekunder.
Hæld cocktailen gennem en si i et køligt glas fyldt med is.
Pynt med ærteskud eller mynteblade på toppen og server straks.
Tip: Hvis du vil have en endnu grønnere farve, kan du tilføje et par dråber grøn frugtfarve til cocktailen.
